FERMENTED MALTODEXTRINS are produced by non-toxic fungal organisms, in particular a non-toxic strain of Aspergyllus niger is used as the starter of the fermentation, which is completely removed at the end of the fermentation process, also to avoid problems of allergic reaction in rediscovered subjects. The fermentation of maltodextrins by this fungus gives birth to these enzymes: Amylase (30,000 DU/gram), Protease (60,000 UT/gram), Protease concentrate (25,000 HUT/gram), Glucoamylase (40 AGU/gram), Lipase (1,500 FCCLU/gram), Cellulase (6,000 CU/gram), Lactase (10,000 ALU gram), Endophytase (140 endo-PG/gram). Maltodextrins subjected to fungal fermentation naturally contain this set of enzymes that can adequately support digestive physiological functions. The main characteristics of the product obtained by fungal fermentation of maltodextrins can be summarized as follows: a) naturally contains a broad spectrum of digestive enzymes, capable of supporting normal digestive function by complementing the action of endogenous pancreatic enzymes; b) fungal-derived enzymes are active at a temperature that approaches that of the human body (40-45°); c) they can function in an environment ranging from pH 3.0 to pH 9.0, and are therefore the only enzymes active in both the acid, basic and neutral tracts of the intestine. In this regard, it is important to underline that Pepsin and Trypsin only work in the acidic pH of the stomach, while pancreatic enzymes are only active in the alkaline pH of the small intestine. This favors the decrease of the body’s own digestive enzyme secretion, allowing the pancreas to produce greater quantities of systemic and immune enzymes. Fungal enzymes effectively break down proteins, carbohydrates, fats and fibers, unlike for example bromelain and papain which have an exclusively proteolytic action, furthermore, this special blend of digestive enzymes also allows you to break down sugars, dairy products and even promotes assimilation of minerals contained in plants through the enzyme Endo-phytase. Taken before a meal, the fungal enzymes naturally contained in fermented maltodextrins help to enhance the pre-digestion of foods carried out by ptyalin or by enzymes naturally contained in the food itself. Deactivated but not destroyed during the passage through the gastric acids, they are reactivated in the duodenum further contributing to the completion of the digestive process (as also recently demonstrated in an in vitro study using a patented device that faithfully reproduces the different environmental conditions of the gastrointestinal tract). In general, therefore, fermented maltodextrins are a valid support to the normal physiological functioning of the digestive process, contributing to the reduction of functional alterations typical of situations such as food intolerances, halitosis, constipation, diarrhea and alternation of the habit. MILK CARDO (Silybum marianum) is a hepatoprotector and is indicated in the prophylaxis and therapy of liver diseases due to intoxication (toxins, alcohol), has been tested in intoxications by compounds that induce hepatocyte degeneration. The flavonolignans contained in thistle bind to the cell membrane stimulating the production of RNA by acting on RNA-polymerase A, so that as a consequence there is an increased enzymatic synthesis with consequent facilitation of the detoxification of harmful molecules.
